A "traditional" bubble for Christmas

The "traditional method", do you know it? This is the name given to the technique of making Champagne. It is called "Champenoise method" there. Appellation of origin oblige, we practice this same technique elsewhere under the name of "traditional method", especially for Spanish Cava, for Italian Franciacorta, and ... for most sparkling Quebecers!

 

The best method?

There is a multitude of sparkling on the planet, for all tastes, and elaborated according to different techniques. But the sommeliers generally agree on one thing: the sparkling wines produced according to the traditional method are often the most qualitative.

 

How it works?

A "quiet wine" is first made in a vat and then bottled. Then, and this is the particularity of the traditional method, a second fermentation is caused directly in the bottle, thanks to the addition of a "liquor of pull", a mixture of sugar and yeasts. Under the action of these yeasts, the sugar turns into alcohol, and produces carbon dioxide.

 

What does it bring?

The fact of carrying out the second fermentation in a bottle, and not in a tank, often results in a very fine quality bubble. This is also due to the aging on the lees, which usually lasts at least 12 months, and which gives the sparkling wine its highly sought-after brioche flavors.

Bouteille Monde Les Bulles 

The "Monde Les Bulles" is an excellent sparkling wine made in Quebec using the traditional method, by the Rivière Du Chêne winery, in St-Eustache. His particuliarity? The liqueur of print used is based on their ice wine! An original idea that gives a local flavor.

 

Very aromatic, it recalls applesauce, white flowers, grilled brioche, and a touch of caramel. Very enveloping in the mouth, with a sensation of residual sugar quite noticeable, but sustained by a nice acidity. As an aperitif, it can accompany your mouthfuls of foie gras on gingerbread, and at dessert with your "traditional" Christmas log!
