The dark red color of the meat appears around the age of 14 months of life of the animal. It can be prepared in various forms: in charcuterie (creton, sausage, pâté or terrine) or in main dishes (roasts, tournedos, stews, ribs, kebabs, candied meats, sausages or burgers).
