The idea is not to offer oysters produced in the Laurentians, there are none! However, they come from the Îles-de-la-Madeleine, New Brunswick or Prince Edward Island, you could give them a very local flavor, accompanying them with a good local wine...

The Rivière du Chêne vineyard, in St-Eustache, develops William wine, white dry and crisp with aromas of citrus and white fruit. A sensation of minerality and good acidity make this wine the perfect companion for your oysters on shell, on which you simply add a squeeze of lemon, or a mignonette apple Oka for an even more local agreement.
